I've heard that really dedicated trainspotters do carriage spotting. Or they might use Apparation and clandestinely acquired guide books to spot Muggle trains, which is a really guilty pleasure because of the Statute of Secrecy, so "being a trainspotter" becomes the HP world equivalent of parkour or ziplining, and its elite practitioners are spoken about in similar terms.
In other random HP thoughts, I spotted a "Special Skull Fountain Firework" in the firework cabinet at the local Tesco Express, leading me to mutter, "And you, too, can create an authentic Death Eater Dark Mark Experience in the privacy of your own back yard."
I think the Muggle option seems most likely - like the idea of it being an extreme sport. And of course Muggle-born witches and wizards will think they're crazy for being excited about it, another easy way for the Pure-bloods to spot them.
Not a huge fan of domestic fireworks, my mother's shop was burned out by them. Playing Death Eater with them... just no.
All of those there's probably only one or two and in widely different geographic areas, so unless you're prepared to spend a lot of time/money travelling it's going to be a difficult hobby to pursue. Of course that doesn't stop Luna Lovegood from going after fantastic beasts...
I'm talking about witches and wizards in the Harry Potter universe who like to watch trains and would find magical ones more interesting so both, I think.

Or they take a Morning Town ride.
Or one of the options here - https://en.wikipedia.org/wiki/Ghost_train_(folklore)
