Although I'll probably never have a huge amount of use for it, my favourite app so far (and I've even paid £1.49 for it) is Measures HD, which uses the built-in sensors etc. for various possibly useful purposes

Tesla meter - fairly sensitive magnetic field meter
Decibel meter - noise level with graph
Big compass with GPS latitude and longitude
Protractor - not sure what I will use it for
Ruler - ditto
level gauge
Spirit level
Plumb bob
Seismograph - yes, really, very sensitive too
Stop watch
Timers
Metronome

I'm reasonably sure I'll never need most of these functions, but it does seem amazingly cool.

Ah yeah, I saw that on telly once, made me really really want an ipad. Don't think the other tablets can do all that stuff to the same level of accuracy.

I really didn't expect to like the thing as much as I do - it really is quite different from other computers, and while I suspect it will never be hugely productive for me it has some interesting possibilities.

Yes, there are a lot of things you can't do on a tablet. Like typing, they're hopeless at anything that involves more than a few keystrokes. But still very nice toys none the less.

I use mine mostly for comics.

The sensors used in tablets and phones are pretty generic so precision should be about the same device to device. The people writing the apps tend not to put error bars on what they display so there can be a certain amount of Dunning-Kreuger effect going on.

I have to say that my favourite iPad app is one I don't use that often, it's Hanno Rein's Exoplanet app. I don't really have a need to know what the most recent exoplanets to be discovered are, but it is still cool to be able to do so, and in such a visually attractive way.
