Tomato-less Pizza?

I have friends coming over on Saturday, including someone who is a vegetarian and allergic to tomatoes. I thought I might try my hand at a tomato-free pizza. Does a pizza bread base with caramelised onions, peppers, and say goat cheese sound OK?

Ooh yes. Things like olive oil, marinated artichokes, olives, garlic, capers are also good.

Replacing pizza bread with pastry, it sounds like the Tesco's Finest pepper and goat's cheese flan I usually serve up to the same people.

Definitely! Caramelised onions make a lovely pizza.

The Co-op do one with potato slices, cheese and rosemary which would go really well on top of the onions, too. (They add chorizo too but I reckon as long as the cheese is tasty it would be fine without.)

Don't want to get too complicated, it's a buffet meal so the pizza is just one of several choices.

I've never come across a recipe that isn't made better simply by adding cheese... :)

That does sound good... although I would brush the pizza base with olive oil before adding the toppings. Something else to try would be a bit of unsweetened mango puree (mango makes a surprisingly good substitute for tomato) or, even better, a roasted red pepper puree. My sister-in-law, who is allergic to tomatoes, generally uses the latter.
