Bloomsbury have already posted profit warnings for next year, and announced that they're open to submissions from potention JKR successors. In practice I suspect that they can mine the seam for a couple more years with Guides and Encyclopedias (and possibly a Christmas Annual) before the bubble bursts completely.
There will be special collector's editions, and they're probably getting a piece of the movie deals. They will probably continue to make a steady income off the books for decades to come, just not as much as they have been over the last few years.
